The JKD backfist usually comes after a trap so first thing I would say is avoid the trap. I use the basic inside defense.
PS: I love that JKD backfist. Its effective and difficult to defend.

Without the trap, I treat it just like a jab- inward parry with my right hand or slip to the right, possibly with a straight left underneath to the body.

Carruthers's speed is CRAZY!!! I wonder what drills could possibly make you that quick, or is it only a few ppl can attain that sort of speed?

I would attribute it to his very high level of fitness.

I don't know, I have seen some very fit MA practitioners but not with this speed. He must use some very good speed drills/exercises + many years of technique.
Look at these strikes and the speed VIDEO (http://inat.org/JKD/movies/Attacking%20Blast.mpeg)
I don't know how much power is actually created in those strikes but they can sure divert/confuse defender before a power strike.
